Curried Sweet Potato Latkes

Ingredients:
2/3 c. flour
1 T curry powder
1 T packed brown sugar
2 T granulated sugar
1 ¼ t. baking powder
2 T cumin
Pinch of salt and white pepper
3 beaten eggs
1 # (one jumbo) sweet potato, peeled and grated
Combine the above dry ingredients and mix well. Add the beaten eggs. Add the grated sweet potato.
Drop by spoonfuls in peanut oil until golden brown on both sides.
Makes 12 latkes
Fruit Chutney
Prepared by Chef Marty Glucklich of Veg Restaurant
Ingredients:
2 C. brown sugar
2 C. diced peaches
½ dried apricots
1 C. dates
½ C. golden raisins
½ C. water
½ C cider vinegar
½ t. turmeric
½ t. ginger
Directions:
- Add all ingredients to heavy-bottomed saucepan and heat over low, stirring constantly until thick.
- Turn heat to low and simmer 20 minutes or until the fruit is cooked and thick.
- Cool and eat
Yield: 3 Cups
